Using up more ingredients for a lovely breakfast. Yesterday I cooked some canned artichokes and a black pepper sauce mix together with some soy milk. This morning I put a few spoonfuls atop some toast and heated it in the oven and added an oven poached egg.
I love poached eggs but they’re too much of a pain to make the traditional way on a Monday morning. Recently I heard about cooking them with a few tablespoons of water in a muffin tin and thought it was genius. Spray the muffin tin with some non-stick spray/oil/butter, then put in a few spoonfuls of hot water, add eggs, then put them in the oven at 400 F for 7-9 mins. It takes like 2 minutes to assemble and you pop ’em in the oven and it’s hands free until you’re eating the toast.
